Magic Marinated Tomato Salad

This fresh tomato salad is bursting with juicy tomatoes, fragrant herbs, garlic, and a tangy homemade dressing. It’s the perfect side dish for grilled meats, seafood, sandwiches, or crusty bread.

Ingredients
4–5 ripe tomatoes, sliced
3 green onions, finely chopped
¼ cup fresh parsley, finely chopped
2 tablespoons fresh dill, chopped (optional)
2 garlic cloves, minced
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon red wine vinegar (or apple cider vinegar)
1 teaspoon honey (optional)
½ teaspoon Dijon mustard (optional)
Salt and black pepper, to taste
½ teaspoon dried oregano

Step 1: Prepare the Tomatoes
Wash the tomatoes thoroughly.
Slice them into ¼-inch thick rounds.
Arrange the slices on a serving platter.
Step 2: Make the Dressing
In a small bowl, whisk together:
Olive oil
Lemon juice
Red wine vinegar
Honey (if using)
Dijon mustard (if using)
Minced garlic
Oregano
Salt and pepper
Whisk until the dressing is smooth and well combined.
Step 3: Add the Fresh Herbs
Stir the chopped green onions, parsley, and dill into the dressing.
Mix well so the herbs are evenly coated.
Step 4: Assemble the Salad
Spoon the herb dressing generously over the tomato slices.
Make sure every slice is coated with the flavorful marinade.
Step 5: Marinate
Cover and refrigerate for 20–30 minutes.
