No-Bake Peanut Butter Pretzel Clusters

Instructions

1. Prep Your Pan
Line a large baking sheet with parchment paper or a silicone baking mat. This will prevent the clusters from sticking and make for easy cleanup.

2. Melt the Chocolate
Combine the white chocolate chips and the optional coconut oil (or butter) in a microwave-safe bowl. Microwave in 30-second bursts, stirring well after each interval, until the mixture is mostly melted and smooth.

Tip: White chocolate can scorch easily. Stop heating when a few small lumps remain and stir vigorously until the residual heat melts them completely.

3. Combine the Crunchy Ingredients
In a large mixing bowl, stir together the crushed pretzels, peanut butter, and the optional chopped peanuts until they are well combined.

4. Bring It All Together
Pour the smooth, melted chocolate over the pretzel and peanut butter mixture. Gently fold everything together with a spatula until all the pretzel pieces are evenly coated.

5. Form the Clusters
Scoop generous spoonfuls of the mixture onto your prepared baking sheet. You can make them as rustic or as uniform as you like.

6. Add a Finishing Touch
If you’re using sea salt flakes, sprinkle a tiny pinch over the top of each cluster right now. This adds a wonderful burst of salty flavor that perfectly balances the sweet.

7. Let Them Set
Place the baking sheet in the refrigerator for at least 1 hour, or pop it in the freezer for about 20 minutes, until the clusters are completely firm.

8. Serve and Store
Enjoy these clusters cold straight from the fridge. Store any leftovers in an airtight container in the refrigerator for up to one week.
